Kothimbir Vadi is prepared with some dry spices, gram flour, and rice flour.
Ingredients to make Kothimbir Vadi:
- gram flour half a cup
- Rice flour 2 tbsp
- Green coriander half cup finely chopped
- Sesame seeds 1 teaspoon
- lemon juice 1 teaspoon
- oil 1 tbsp
- Ginger grated 1-inch piece
- Green chili 1 to 2
- Red chili 1 teaspoon
- turmeric powder half teaspoon
- salt to taste
- Garam masala half teaspoon
- Baking soda half teaspoon
- oil for frying
Method to make Kothimbir Vadi:
Kothimbir Vadi: First of all, put the gram flour in a big utensil, add rice flour, and mix it, adding a little water, and stir the gram flour until the lumps are gone. Now add a little more water and mix it keeping in mind that the solution should not be too thin nor should it be too thick.
Now add green coriander, ginger paste, green chilies, red chilies, turmeric powder, salt, garam masala, lemon juice, and 1 tablespoon oil to the solution and mix it in the batter, add sesame seeds and mix everything well. Take. The mixture is ready.
For Steaming:
Now cook this mixture in the cooker. Put 2 cups of water in the cooker and keep it for heating after the water becomes hot, put a net stand or plate in the water on which we can place the utensil filled with the mixture.
Add baking soda to the prepared mixture and mix, Do not beat the mixture for too long by adding baking soda, mix it, As soon as the mixture starts to swell a little, stop beating the mixture. Put the mixture in a greased utensil, and flatten the utensil by knocking it a little.
Place the utensil filled with the mixture on the plate placed in the cooker and close the lid of the cooker, do not whistle over the lid. The gas should burn so much that the water always boils and steam is formed.
Let the mixture cook in steam for 15 minutes, To check whether the mixture is cooked and ready, insert a knife into the cooked mixture and see if the mixture does not stick to the knife. If the mixture sticks to the knife, then cook it for some more time it
After the mixture cools down, take it out on a plate and cut it into pieces of your choice. Put oil in a pan and let the oil get hot. After the oil gets hot, put as many pieces as you can in the hot oil fry them till they turn golden brown, and take them out. Fry all the cut pieces and take them out on a plate.
